Cured by hand using Chef Paul Newmans signature recipe, this is a firm favourite on our menu. Wester Ross Scottish Salmon is cured over a number of days and then sliced by hand. It owes it’s spectacular colour to the beetroot cure and a delicious kick of Dewars Whisky and Zesty Citrus makes this a great starter for a dinner party.
