Who are we?

We are a family business based on a hill farm just outside the picturesque town of Aberfeldy. We are passionate about great food, great service, conserving our environment and Britain’s rare-breed native animals.   We have a strong ethos for quality and care which comes through in everything we do. We have a small and dedicated team here:

Alastair and Iris Budge-Reid

In 1998 Alastair and Iris Budge-Reid bought Errichel Farm and have worked tirelessly to make it into what it is today.  Over the years they have redeveloped the outbuildings to provide quality holiday accommodation, extended and refurbished Errichel House to provide luxury guest accommodation, a professional kitchen and a stunning dining room for Thyme at Errichel Restaurant.  They have fitted solar panels and installed a district heating biomass boiler to ensure that guests can enjoy abundant hot water and central heating without relying on non-renewable resources.  Errichel Farm represents two lifetimes of hard work and is testimony to the vision they have and the importance they place on ensuring high standards throughout.  They placed the foundation stones for the business in strong business ethics, quality and service.  They are often found working in the gardens and maintaining buildings, plumbing, electrics etc. Iris has been instrumental in instigating further exploration into Errichel Farms past, from recent history through to prehistoric times. It's fair to say that although they are 'retired', they continue to do an astonishing amount of work. 

Paul Newman - Our Chef & Patron

Patron Paul Newman has an enviable culinary background having lead Chef Teams within some of the most prestigious hospitality destinations in the world. Paul brings his wealth of knowledge to beautiful Highland Perthshire. From an initial apprentiship with Lloyd’s of London moving on to a post with The Royal Airforce Club, Picadilly, London. Paul’s natural flair for cooking was apparent from the outset and his career soon took off.
Working with and absorbing world cuisines from Cape Town to Kenya, Zanzibar, Angola, Egypt, Dubai, the Middle East and Switzerland to name bit a few. With an entry in the International Who’s Who of Chef’s and positions which include Executive Chef for Hilton Belfast, Cardiff, London, Heathrow Airport and the ‘Caley’. Paul was also Executive Chef at The Palace of the Lost City, Sun City, South Africa & at the Mount Neilson Hotel, Cape Town – don’t ask him about the Crocodile Golf Hazard...
Paul’s years of experience and enthusiasm for the raw ingredients is evident on the plate. Rearing his own Rare Breed Beef & Pork and using the best possible local & region produce you can be sure that you meal is in good hands.

Rebecca Newman - Manager

Married to Paul & one of 3 daughters to Alastair and Iris, Becky comes from a hospitality and Human Resources background.  You will often find Becky in a pair of wellies, working on the farm, or taking Guided Walks and Farm Tours.  Becky is one of the voices at the end of the phone when you call to make an enquiry and looks after much of the business administration. 

Fiona Sloan - Front of House Manager

Fiona is an experienced Hospitality Manager, who is responsible for the running of Errichel House.  Fiona is one of the voices at the end of the phone, will handle enquiries and bookings, welcome guest at check in and ensures the smooth running of Thyme at Errichel Restaurant.  She also happens to make The Best Cocktails and her knowledge & understanding of food and drink is extensive.  If you are looking to hold a wedding or event at Errichel, Fiona is the person who will handle your booking from enquiry right through to the end of your special day.  

Andrew Bain - Chef

Andy grew up in New Zeland,  has worked in professional kitchens for over 15 years and supports Paul in Thyme at Errichel.  Together they write a new menu each week to offer our guests, which is influenced by seasonal and local produce. 

Derry Sloan - Front of House

Derry is our Front of House Assistant, looking after housekeeping and food service.  Derry has completed her World Host Customer Service Training and supports Fiona in all aspects of Guest Relations and customer service.

Raina Jones - Farm Assistant

Raina comes to Errichel from a strong equine background.  She works with Dervla to look after all the livestock, her role focuses on training our ponies to enable them to take on useful roles on the farm. Raina is a trained Guide and First Aider and is one of our Guides for our Farm Tours and Archaeology Walks.

What do we do?

We are a quality food and hospitality provider. We run Errichel, a small and diverse farm and we make use of our own farm produce in the food we serve. Errichel House and Cottages provides unique luxury guest accommodation here on the farm.   From our professional kitchen and skilled hands of Paul Newman, our Chef-Patron we operate Thyme to Eat; packaging our own produce for you to take home to enjoy. Thyme at Errichel Restaurant provides Breakfasts to those staying at Errichel House and is open for dinner in the evenings on Thursday, Friday and Saturday from 6pm. Thyme can cater for weddings and events here at Errichel and we have a small fleet of vehicles to enable us to bring our catering to a venue of your choice, be it a hillside bothy or a Castle!

Thyme’s Philosophy of Good Taste

We pride ourselves on rearing & sourcing quality local ingredients which are then prepared by Chef Patron Paul Newman & his team to showcase the best in Scottish products with flavours and influences from around the world.
All our Pork & Beef is reared here on Errichel Farm using the highest welfare standards to produce healthy happy animals. We breed Rare Breed Shetland Cattle & Rare Breed Large Black Pork; both ideal for life on a hill farm.
All our eggs are collected from our own flock of Chicken & Ducks and when they are off-lay we purchase from local Perthshire based supplier Linda Chisholm.
Our Water Buffalo Steaks are sourced from Puddledub Farm just over the border into Fife. The majority of our Seafood is landed at either Oban, Wester Ross or Loch Fynne and always from sustainable sources.
We only use Stornoway Black Pudding and all our Venison is from our own estate.
Salad Leaves are farmed by Gregg Menzies at Balhomais Farm, Dull, By Aberfeldy. Fresh Berries are from Mains of Murthly Soft Fruits in Aberfeldy. Cylindra Beetroot from Gordon Caldwell in Ayreshire. This gives our fabulous Beetroot Marinated Salmon it’s unique taste.
Herbs are sourced from ScotHerbs, Longforgan, Perthshire. We are lucky enough to get our Set Honey from Margaret Thomas in Aberfeldy.
We also offer a selection of fabulous Artisan Scottish Regional Cheese served with carefully selected Local & Scottish accompaniments.
Our Chutneys, Jams & Preserves are all made in-house as well as all our home-baking.
Chef Patron Paul Newman & his team are passionate about local & Regional ingredients and trust that you will enjoy chatting with us and each other about the fabulous range of ingredients we have on offer.

We pride ourselves on showcasing the best in Local, Regional & Scottish produce alongside a range of other great Wines, Beers, Spirits & Soft Drinks.
We have Dewar’s Aberfeldy Distillery on our doorstep producing Golden, Honey toned Single Malt Whisky.
Strathbrann Brewery is a stones throw away; father and son team Martin & Mark Proctor produce fabulous Beer.
The Rookery, River Ericht, in Blairgowrie produces Mead using local ingredients and Strathearn Gin produced in Methven is always popular. Needless to say we have produce from all these local suppliers in our very well stocked bar.
Scottish Dark Matters Spiced Rum and Perthshire Ogilvy Vodka also feature in our local range of Spirits.
With a great range of Gins from Scotland & further afield complementing our Whisky, Liqueur and Spirit range.
We have a lovely Cocktail list with old favourites sitting alongside Errichel Own Recipes using base cordials & mixes prepared here by our Front of House Team.
Our Wine list features different wine producing areas and working with 3 wine suppliers you’re sure to see some familiar favourites next to delicious wines you may not have tried before; with many of our wines available by the glass.
We have a wide range of Soft Drinks & Mocktails also on offer and delicious Glen Lyon Roasters Coffee; roasted in Aberfeldy and the Tea Forté Range to bring a unique taste to the end of your meal.
Our drinks selection is carefully chosen to bring you the best produce available to enhance your dining experience.
